With the weather changing I had to share this. I made this up a few years ago when money was tight and it's now my comfort soup.
CARROT SOUP
4 cups carrots, sliced
3 small/medium sized red potatoes, chopped (with skin)
2 celery stalks, sliced, ribs removed
1 cup water
4 cups chicken stock/broth
2 cups milk.
Place veggies and water in a large pot over medium/low heat. Simmer until fork tender.
Add veggies to blender with enough stock to cover. Blend smooth leaving some lumps. A hand held blender works great too just blend right in the pot.
Put back into pot and add the milk and rest of stock. Bring to a simmer and cook for fifteen minutes. Pepper to taste, NO salt.
Enjoy.
