I love this recipe because it is so simple and easy. A great thing to do on a rainy day.
Italian bread slices
Fresh Basil
Sweet cherry tomatoes
Mozzarella Cheese
(My husband insists on putting pepperoni on this)
Lay out cheese on the bottom slice of bread (trust me, it keeps the tomatoes from flying all over the place when you flip the sandwich). Slice the tomatoes and lay over the cheese, top with basil and second slice of bread. Toast in a pan drizzled in olive oil.
