How after saving your own seed do the become heirlooms? Or can your own saved seed even be considered heirloom?

Well, open-pollinated means a variety that will grow true year after year if the seed is saved. Heirloom is open-pollinated but they are usually varieties that have been passed down from generation to generation.
I know that new "open-pollinated" varieties probably are developed each year. An open-pollinated variety is stable.... and produces a plant that is just like the parent.
