I am experimenting with having my onions and eating them too!
When you buy or harvest a bulb onion, instead of cutting off the roots at the bottom and any sprouts there might be, try this:
Peel off the dry outer layers
With a sharp knife, trim the outer layers leaving the inner layers intact from the roots to the stems/leaves.
What will remain looks a lot like a green onion (scallion) and if you plant that part, a bulb should regrow. You can then reharvest at a later date, and a later date, etc
At least that is my theory, and what I am experimenting with
