I made the most delicious maple cream from some of the syrup we made this year. It is really easy to do and is wonderful on toast, biscuits, ice cream and just about anything else you like a little touch of sweetness. I posted directions on my blog but basically all you have to do is boil down some syrup in a REALLY TALL pot (it foams up tremendously) until it reaches 24 degrees above boiling water...it does vary by location. Then you let cool to at least 80 degrees undisturbed in an ice water bath. Once cool, you stir A LONG TIME until creamy and smooth.
My husband's appetite is so bad right now but he loves this stuff and I can get him to eat maple cream and peanut butter sandwiches. The fruity jelly makes him sick to his stomach but the maple cream does not. He even likes maple cream and ice cream shakes (I add some protein powder, shhhh).
If you were able to make enough or can obtain 4 cups of syrup, it is so worth it. Kim
