Favorite Summer Salad

We love to make a fresh salad of tomatoes, cukes, fresh basil and garlic dressed with EVOO and Balsamic Vinegar as a side dish. To make it a meal we add black olives, chick peas and mozzarella cheese. YUM :D:D

I wondered what folks did with all those tomatoes and cukes when there was no lettuce around!

Come to think of it, tomatoes, cukes and onions with Italian dressing was a staple in my family growing up.

we used to go to the kitchen get: salt/vinegar/bowl/knife.... go the the garden and have at them.... we overdosed on cucs/tomato/peaches... and anything else that tastes good with salt and vinegar.
